Do This (Daily)
- Pre-shift — Run FOH lineup before every service starts
- Monitor — Watch floor pace and table turns throughout service
- Resolve — Fix every guest issue on the floor before it goes up
Do This (Weekly)
- Review — Go through guest complaint log with GM
- Coach — Give one FOH team member specific skill feedback
Avoid This
- Stationary — Standing still during service means guests are being missed
- Blind — Struggling servers need help now — not after service
- Escalate — Try to fix it first — GM is the last resort
