- Clearing — Tables cleared within 60 seconds of guests leaving
- Reset — Full reset done before the next guest sits down
- Window — Food never sits in the window more than 2 minutes
- Stock — Bussing supplies restocked before peak every shift
- Awareness — Eyes on the floor at all times — never zone out
Do This (Daily)
- Clear — Hit every table within 60 seconds of guests leaving
- Window — Alert servers to food in the window immediately
- Stock — Restock all bussing supplies before the rush starts
Do This (Weekly)
- Report — Tell Service Manager about any recurring service slowdowns
- Clean — Deep clean your station area every week
Avoid This
- Slow — There is no slow pace during service — keep moving
- Partial — Never leave a half-reset table — finish the job
- Blind — Food sitting in the window is always your problem too
You're Out If: Food sits in window 5+ minutes due to your inaction — three times in one month
