- Tips — Review your average — ask GM for coaching if it's dropping
- Menu — Know every item — never guess in front of a guest
Avoid This
- Disappear — Guests should never have to look for you
- Argue — Guests are always handled with calm and respect
- Dirty — Never leave a dirty table while guests are waiting to be seated
You're Out If: Caught stealing from tips, the register, or other staff
