THE BELMONT JR SOUS CHEF/LEAD LINE COOK

ROLE EXPECTATIONS

The primary responsibility of this position is to support store managers and Chefs in supervising shifts at the store level.

Additional responsibilities include supervising the completion of assigned tasks, scheduling pars for successful shifts, completing daily reporting functions, and supervising the quality food and service procedures of the FOH team.

GENERAL RESPONSIBILITIES 

FINANCIAL RESULTS

• Check-in product and codes invoices 
• Assist the Executive Chef with accurate inventory counts

GUEST SATISFACTION

• Run great shifts
• Completes assigned company opening and closing procedures
• Staffing pars are accurate and validated
• Thorough and energetic lineup
• Completes daily usage and par levels 
• Establishes prep needed and assigns to staff 
• Places orders for product 
• Ticket times are within the acceptable range
• Cutting is appropriate for volume and labor goals
• Sidework is validated
• The ambiance is being monitored - Music, lighting, temperature, etc
• Communicates to leaders about shift wins and challenges on a routine basis  
• Involves Managers in employee issues or conflicts when they occur and completes documentation as  assigned 
•  Supervises training of new staff members 
• Coaches and mentors team members on hospitality and provides the appropriate examples in all  behaviors and communication with guests 
• Maintains a commanding understanding of product and menu knowledge  
• Secures building assets when closing the restaurant 
• Food Quality and Safety
• Responsible for the food quality and execution of recipes, plate specs, and line checks during your shift
• Ensures Culinary processes of quality, safety, and sanitation are being followed and practiced by all teammates during your shift 

FACILITIES

• Own the organization and cleanliness of all walk-in refrigeration and freezers
• Cleanliness of facilities is to company standards during your shift
• Store leadership is setting up the restaurant on time for service and meets company standards
