Now, we are seeking a talented and motivated Executive Catering Sous Chef to join our culinary team and continue our tradition of excellence, working closely with Executive Chef partner, Tom Dyrness. The Executive Catering Sous Chef will serve as the liaison for all catering orders from Plate Perfect Catering to Mama Ricottas. This individual will prep, produce, and execute all BEOs and be the point of contact for the event staff designated to deliver, ensuring all materials are delivered seamlessly.

Responsibilities:

• Oversee production of all catering orders that go through Mama Ricotta's, serving as the Executive Catering Sous Chef.
• Supervise and provide strong leadership to kitchen staff, ensuring the highest standards of food preparation and safety.
• Lead the charge in daily kitchen operations, including food production, plating, and presentation.
• Assist in managing inventory and ordering supplies to maintain optimal stock levels.
• Maintain a clean and well-organized kitchen environment, adhering meticulously to all health and safety regulations.
• Ensure that all catering orders leaving the kitchen meet our uncompromising quality and catering presentation standards.
• Coordinate all Business Event Orders (BEOs) and orders for catering from Plate Perfect Catering, a part of FS Food Group, serving as the direct liaison.
• Communicate directly with event servers to ensure all food is delivered together, making the process seamless for our guests.
• Support the Executive Chef in administrative tasks such as scheduling, budgeting, and reporting.

Qualifications:

• Proven experience as an Executive Chef or Executive Sous Chef or a similar role in a high-volume restaurant setting, ideally with prior experience in an executive capacity.
• A profound passion for Italian cuisine and an extensive understanding of Italian culinary techniques.
• Demonstrates strong leadership skills with a knack for motivating and mentoring kitchen staff.
• Excellent organizational and time-management skills.
• Thorough knowledge of food safety and sanitation regulations.
• A culinary degree or equivalent experience is preferred.
• Ability to thrive in a fast-paced, high-pressure environment.
• Experience as a catering professional is preferred.
• Exceptional communication and teamwork skills.
