The Dishwasher is responsible for ensuring all dishes, utensils, and kitchenware are cleaned, sanitized, and stored properly to support a clean and efficient kitchen environment.
Core Responsibilities
- Arrive on time to your scheduled shift
- Follow all food safety guidelines & sanitizing temperature requirements
- Only operate dish machine after completing required training and certification
- Use all PPE when handling chemicals (gloves, eye protection, plastic apron)
- Wear non-slip boots during all shifts for safety
- Use wet floor caution signs when floors are slippery
- Follow all uniform and apron policies throughout your shift
- Accurately complete and submit all assigned checklists daily
- Respect all equipment used in dishwashing and kitchen sanitation processes
- Assist the Kitchen Manager or BOH Team Lead in organizing product during vendor deliveries, when assigned
- Communicate with Kitchen Manager or Supervisor about dishwashing priorities based on guest service needs
- Help out in other areas of the restaurant as assigned
- Work together as a team to assure quality for our Guests
- Promote a good, safe work environment for yourself and your Co-Workers
Dish-Specific Duties
- Monitor water temperature throughout shift (minimum 160°F–180°F) and document if required
- Check and document pH level of sanitizing cycle (if trained to do so)
- Immediately notify Manager or Supervisor if:
- The machine is malfunctioning
- The sanitizing temperature is not met
- Soap or sanitizer is low or empty
- Excessive soap or sanitizer is being used
- Clean dish machine during shift and between uses
- Change water in dish machine tank as scheduled
- Clear spray jets at regular intervals
- Scrape and rinse all dishes, utensils, pots, and pans before loading into machine
- Ensure proper cleanliness and sanitation of all items processed through the dish machine
- Keep dish area clean, organized, and free from contamination
- Maintain clean storage areas for all sanitized dishes and utensils
- Mop up any spills or standing water promptly
- Keep trash cans emptied before they become too heavy
- Clean, sanitize, and re-line trash cans as needed
