Job Title: Oyster Shucker

If you're an experienced shucker who thrives in a fast-paced environment and takes pride in every perfectly presented plate, we want you on our team.
Position Overview:
As an Oyster Shucker at Queens Harbour, you’ll be at the heart of the raw bar experience — expertly opening and plating oysters while engaging with guests and upholding our high standards for quality, cleanliness, and presentation. You’ll bring speed, skill, and showmanship to the table, enhancing the guest experience with every order.
Responsibilities:
- Expertly shuck oysters with speed, consistency, and care, ensuring no shell fragments and ideal temperature/presentation
- Inspect oysters for quality, freshness, and safety before serving
- Prepare and garnish oyster trays with attention to visual appeal and house standards
- Maintain raw bar station, including ice, tools, and product levels throughout service
- Interact with guests when appropriate to educate and elevate the oyster experience
- Support prep tasks related to shellfish and cold bar offerings as needed
- Uphold health and safety standards, including safe food handling, station cleanliness, and proper storage of raw product
- Work closely with the kitchen and bar team to ensure smooth service flow
Qualifications:
- Minimum 1 year of oyster shucking experience in a restaurant or raw bar setting
- Strong knife skills and excellent technique
- Knowledge of different oyster varieties and regional characteristics (a plus)
- Ability to work efficiently under pressure in a high-volume setting
- Strong sense of cleanliness, organization, and station maintenance
- Food Handler Certification preferred
- Comfortable with guest-facing interactions and table-side presentation when needed
- Team player with a positive, respectful attitude
