As part of Hilton's Curio Collection, our property combines historic character with distinctive dining experiences and the personalized service of an independent boutique hotel.

Our Food & Beverage operation includes:

  • 8595 Restaurant & Bar: Our signature dining destination, offering elevated Southern-inspired cuisine and exceptional service.
  • Six South Rooftop Bar: A vibrant rooftop experience featuring beautiful views of Augusta, handcrafted cocktails, dining, and social gatherings.
  • Banquets & Special Events: Weddings, corporate meetings, social celebrations, holiday experiences, and private events.
  • Seasonal & Signature Experiences: Holiday dining, specialty brunches, unique culinary events, and other opportunities to create memorable experiences.

The Opportunity

The Director of Food & Beverage will oversee all aspects of the hotel's dining, beverage, banquet, and event operations while building a culture centered on exceptional service, accountability, teamwork, and continuous improvement.


This is a highly visible, hands-on leadership position. Our ideal candidate is just as comfortable welcoming guests at the restaurant entrance, supporting a busy banquet, and assisting the service team as they are reviewing financial performance or developing new strategies.

What You'll Do

Lead Through Example

  • Be a visible, engaged, and approachable leader throughout all Food & Beverage outlets.
  • Work alongside your team during busy service periods, special events, and peak business demands.
  • Establish clear expectations for professionalism, service excellence, accountability, and teamwork.
  • Foster an environment where every team member feels valued, supported, challenged, and inspired.
  • Lead with humility and a willingness to do whatever is necessary to support the operation.
  • Develop future leaders through coaching, mentoring, training, and meaningful feedback.
  • Address performance challenges promptly, fairly, and consistently.

Create Unreasonable Hospitality

  • Champion a guest-first culture that emphasizes genuine connections, thoughtful details, and memorable experiences.
  • Empower team members to anticipate guest needs and find creative opportunities to exceed expectations.
  • Maintain an active presence in the dining room, rooftop bar, and banquet spaces, engaging with guests and gathering feedback.
  • Take personal ownership of service recovery and ensure guest concerns are resolved with care and urgency.
  • Collaborate with the culinary team to continuously enhance the overall dining experience.
  • Inspire the team to understand that exceptional hospitality is not always about grand gestures; often, it's the smallest details that make the greatest impression.

Own the Operation

  • Oversee daily operations of 8595 Restaurant & Bar, Six South Rooftop Bar, banquets, beverage service, and other Food & Beverage experiences.
  • Ensure consistency in service standards, cleanliness, presentation, food quality, and guest satisfaction.
  • Work collaboratively with the Executive Chef and culinary leadership to maintain operational excellence.
  • Establish effective scheduling and staffing strategies based on business levels and operational needs.
  • Maintain compliance with food safety, sanitation, alcohol service, and applicable health regulations.
  • Support the planning and execution of special events, holiday celebrations, and unique guest experiences.
  • Identify opportunities to improve operational efficiency without compromising the guest experience.
  • Take ownership of challenges and work proactively toward solutions.

Build the Business

  • Partner with hotel leadership, Sales, and Marketing to identify opportunities for revenue growth.
  • Develop creative promotions, dining experiences, and special events that attract both hotel guests and the local Augusta community.
  • Understand and actively manage labor costs, food and beverage costs, purchasing, inventory, and departmental expenses.
  • Participate in budgeting, forecasting, financial reviews, and departmental performance analysis.
  • Use guest feedback, service metrics, and financial results to identify opportunities for improvement.
  • Balance financial responsibility with the commitment to delivering an exceptional guest experience.

Be Part of the Leadership Team

  • Work collaboratively with the General Manager and other department leaders to support the overall success of the hotel.
  • Communicate openly, respectfully, and professionally across all departments.
  • Demonstrate a solutions-oriented attitude and a willingness to support the broader hotel operation.
  • Set the tone for a positive, respectful, accountable, and team-focused workplace.

Qualifications

  • Previous leadership experience in restaurants, hotels, resorts, private clubs, banquets, or a comparable hospitality environment.
  • Demonstrated ability to lead, coach, motivate, and develop a team.
  • Strong understanding of Food & Beverage operations, service standards, and guest relations.
  • Working knowledge of labor management, inventory, cost controls, and basic financial performance preferred.
  • Experience with budgeting, forecasting, and profit-and-loss statements is beneficial but not required for candidates who demonstrate strong operational leadership and a willingness to learn.
  • Excellent communication, organizational, and problem-solving skills.
  • Familiarity with Hilton standards and hotel operations is a plus, but not required.
  • A degree in Hospitality Management or a related field is welcomed but not required. Relevant experience, demonstrated leadership, and a passion for hospitality are equally valued.

Schedule & Operational Commitment

Hospitality doesn't operate on a traditional 9-to-5 schedule, and neither does this leadership position.


The Director of Food & Beverage must be willing and able to work a flexible schedule that includes evenings, weekends, holidays, and special events based on business demands.


This position requires a consistent, visible presence during critical service periods, including peak dining hours, banquets, and high-volume events.
