We have launched into a spirited, Southwestern-inspired restaurant and bar that is heavily BBQ-forward, where the vibe is casual and modern. While we’re evolving our identity, we’re dedicated to keeping the quality- not just in the ingredients, but with our staff as well! The menu contains things like slow-cooked meats, Tex-Mex and Southwestern inspired dishes, and some fan favorites from our other restaurants. This will be a menu that is inclusive of gluten-free and allergen-friendly diets, so we’re looking for people who are as committed as we are to providing a safe environment for the guests who have these requests. On the bar side, we will have many kinds of beers, a menu of crafted cocktails, and a heavy focus on fresh margaritas. We need a team that is comfortable in a fast-paced environment and genuinely enjoys the hospitality industry as we aren’t looking for corporate robots; we want people with personality- Especially people who can help us establish a new culture from day one, and people who can make the workplace feel like a haven, rather than a chore. TITLE/JOB DESCRIPTION: Experienced Line Cook

JOB RESPONSIBILITIES:
- Prepare a variety of meats, seafood, poultry, vegetables, and other food items for cooking
- Ensure the quality of products served
- Follow standard portion sizes, cooking methods, and quality standards
- Maintain sufficient levels of food products at line stations
- Portion food products according to standard sizes and recipe specifications
- Maintain a clean and sanitary work station
- Handle and store products properly
- Assist in food prep assignments during off-peak periods
- Close the kitchen properly and follow closing procedures
- Attend scheduled employee meetings and provide suggestions for improvement
- Perform other duties as assigned by the Kitchen Manager or manager-on-duty
JOB REQUIREMENTS:
- High school diploma or equivalent, and must be at least 21 years or older
- Ability to obtain SERVSAFE Food Handler certification within 30 days
- Proven experience working a line in a restaurant kitchen
- Strong understanding of various cooking techniques, with a specific interest in wood-fire, smoking, and Southwestern flavors
- Absolute commitment to food safety and allergy protocols to ensure a safe experience for guests with dietary restrictions
- Proficiency in knife skills and the ability to maintain consistency in portioning and presentation
- Ability to remain calm and focused during a heavy "rush" while maintaining clear communication with the kitchen team
- Physical stamina to stand for long shifts and the ability to lift heavy items, such as briskets or large equipment
- Deep understanding of food allergies and a commitment to following strict cross-contamination protocols, and ability to be trained
- Knowledge of how to properly clean, maintain, and respect kitchen equipment, including smokers and grills
- A team-player attitude with a willingness to jump in where needed to help the kitchen succeed
- Flexible schedule with the ability to work nights, weekends, and some holidays
- A high standard for personal kitchen hygiene and station organization
- Fluency in English
- Driver's license and reliable transportation
- Desire and ability to be cross-trained in other areas of the restaurant
