Job Summary

Altura Concepts is seeking skilled, passionate, and detail-oriented Pizzaiolos to join our culinary team across our family of full-service restaurants, lounges, and fast-casual concepts. The Pizzaiolo is responsible for preparing and cooking high-quality pizzas while maintaining consistency, food safety, and presentation standards. The ideal candidate has a passion for artisan pizza making, takes pride in craftsmanship, and thrives in a fast-paced kitchen environment dedicated to delivering exceptional guest experiences.


Key Responsibilities

  • Prepare pizza dough, sauces, cheeses, meats, vegetables, and other ingredients according to company recipes and standards.
  • Stretch, shape, top, and bake pizzas while maintaining consistency in quality, appearance, and portioning.
  • Operate pizza ovens safely and efficiently while monitoring cooking times and temperatures.
  • Ensure pizzas are prepared and presented according to company specifications.
  • Maintain a clean, organized, and fully stocked pizza station throughout each shift.
  • Properly label, date, rotate, and store ingredients using FIFO (First In, First Out) procedures.
  • Monitor ingredient quality and notify management of any shortages or quality concerns.
  • Follow standardized recipes and portion control guidelines.
  • Assist with daily prep work, including dough production, sauce preparation, vegetable preparation, and ingredient portioning.
  • Maintain cleanliness and sanitation of workstations, ovens, utensils, and equipment.
  • Assist with receiving and properly storing food deliveries.
  • Collaborate with chefs, line cooks, and kitchen staff to ensure efficient kitchen operations.
  • Complete opening, side work, and closing duties as assigned.
  • Follow all food safety, sanitation, and workplace safety standards.
  • Maintain a clean, professional appearance and represent Altura Concepts with integrity and professionalism.
  • Perform additional duties as assigned by management.

Qualifications

  • Previous experience as a Pizzaiolo, Pizza Cook, Line Cook, or similar culinary role preferred.
  • Knowledge of pizza preparation techniques, dough handling, and baking methods.
  • Ability to work efficiently in a fast-paced kitchen environment.
  • Strong attention to detail and commitment to food quality.
  • Excellent time management and organizational skills.
  • Dependable, punctual, and team-oriented.
  • Flexible availability, including mornings, evenings, weekends, holidays, and special events.
  • Current Food Handler Certification or ability to obtain if required by local regulations.

Preferred Skills

  • Experience with hand-stretched dough and artisan pizza preparation.
  • Knowledge of wood-fired, gas, or stone-deck pizza ovens.
  • Understanding of fermentation, dough proofing, and pizza baking techniques.
  • Experience working in high-volume restaurant kitchens.
  • Strong knife skills and food preparation knowledge.
  • Bilingual (English/Spanish) is a plus but not required.

Physical Requirements

  • Ability to stand and walk for extended periods throughout the shift.
  • Frequently lift and carry up to 50 pounds, including bags of flour, food products, and kitchen supplies.
  • Ability to bend, stoop, reach, push, pull, and perform repetitive motions throughout the workday.
  • Ability to safely work around hot ovens, kitchen equipment, and sharp tools.
  • Ability to work in a hot, fast-paced kitchen environment.
  • Ability to work mornings, evenings, weekends, holidays, and extended shifts as business demands require.
